I was gifted Sardegna a Tavola by Rafaelle Balzano many moons ago when in high school by an Italian friend who stayed with us as an exchange student. She was from La Maddalena, a charming town nestled in the Maddalena archipelago off the northern coast of Sardinia, in the province of Sassari. Her mother owned a cozy little bookstore, and this was her thoughtful gift—a little piece of Sardinian culture wrapped in paper and ink.
Self-published in April 1985 under Edizioni R. Balzano in Olbia, the cookbook—written in Italian, English, and Sardo Logudorese/Barbaricino (a Sardinian language dialect)—offers an authentic glimpse into the island's rich culinary traditions. It is printed on kraft paper, a material typically used for its durability and rustic appeal. This choice gives the book an earthy, handmade feel, perfectly echoing the grounded, traditional nature of Sardinian cuisine, and complements the authenticity of the recipes within.
Meticulously organized into sections covering bread and focaccia, hors d'oeuvres and apéritifs, first and second courses, and desserts, each recipe reflects the island's diverse cultural influences, from the pastoral flavors of the mountainous interior to the fresh, briny notes of coastal dishes. But Balzano doesn’t just provide recipes—he invites readers into the cultural heritage of Sardinia with a dedicated section on the history of Sardinian wines, painting a vivid picture of the island's longstanding viticultural traditions.
Adding to the book's charm are the whimsical illustrations by a seemingly local artist, Gaspare Giua. His delightful drawings bring Sardinian life to the page, infusing each recipe with a playful, artistic touch that complements the rustic, heartfelt nature of the cuisine. More than just a collection of recipes, Sardegna a Tavola seems to be a heartfelt tribute to Sardinian identity!
