Cherry Lattice Slab Pie (with Homemade Cherry Filling)
Equipment
- rimmed baking sheet 9 × 13 inch (23 × 33 cm)
Ingredients
Homemade Cherry Filling
- 2.2 lbs pitted cherries (1 kg) fresh or frozen; thaw if frozen
- ¾ cup granulated sugar (150 g)
- 2 tbsp lemon juice
- ¼ tsp salt
- 2 tbsp cornstarch
- 2 tbsp water
- ½ tsp vanilla extract
- ½ tsp almond extract (optional, but beautiful with cherries)
- 1 tbsp unsalted butter (optional)
Shortcrust Dough
- ¾ cup + 1 tbsp unsalted butter (6.5 oz/185 g) softened
- ⅔ cup granulated sugar (135 g)
- 1 large egg room temperature
- 1 tsp vanilla extract
- ½ tsp salt
- 4⅓ cups all-purpose flour (470 g)
Topping
- 2 tsp granulated sugar
- ⅓ tsp ground Ceylon cinnamon
Instructions
Make the Cherry Filling
- Place 2.2 lbs pitted cherries, ¾ cup granulated sugar, 2 tbsp lemon juice, and ¼ tsp salt in a saucepan over medium heat.
- Cook for 8–10 minutes, stirring occasionally, until the cherries soften and release their juices.
- In a small bowl, whisk together 2 tbsp cornstarch with 2 tbsp water to make a slurry.
- Add the slurry to the cherries and cook for 1 more minute, stirring constantly, until the filling thickens and turns glossy.
- Remove from the heat and stir in ½ tsp vanilla extract, ½ tsp almond extract and 1 tbsp unsalted butter (if using) until fully melted and incorporated.
- Cool completely before using.
Prepare the Dough
- Beat ¾ cup + 1 tbsp unsalted butter and ⅔ cup granulated sugar together until pale and fluffy (about 2–3 minutes).
- Mix in 1 large egg and 1 tsp vanilla extract.
- Add ½ tsp salt and 4⅓ cups all-purpose flour gradually until the dough is soft but no longer sticky and holds together easily when pressed.
- Divide the dough into ⅔ and ⅓, shaping each portion into a flat disk.
- Place each portion between two sheets of parchment paper and roll out: the larger portion into a rectangle about 11×15 inches and the smaller portion into a thinner rectangle for the lattice top.
- Transfer both rolled dough sheets (still between the parchment) to the refrigerator and chill for 1 hour until firm.
Assemble
- Preheat the oven to 375°F / 190°C.
- Remove the larger dough sheet from the fridge and carefully transfer it, still on its bottom sheet of parchment, into a 9×13 inch (23×33 cm) baking pan.
- Peel away the top sheet of parchment and gently press the dough into the pan if needed, allowing it to come slightly up the sides.
- Prick the base all over with a fork.
- Bake the crust for 8 minutes until just beginning to set but not browned.
- Remove from the oven and let it cool for 5 minutes.
- Spread the cooled cherry filling evenly over the warm crust.
Lattice Top
- Remove the second dough sheet from the refrigerator and peel away the top parchment.
- Using a knife or pastry wheel, cut the dough into strips about 1 inch (2–2.5 cm) wide.
- Lay half the strips vertically across the cherry filling, spacing them evenly.
- Lay the remaining strips horizontally across the first layer, creating a simple crisscross grid pattern.
Finish & Bake
- In a small bowl, mix 2 tsp granulated sugar and ⅓ tsp ground Ceylon cinnamon.
- Sprinkle evenly over the lattice.
- Bake for 22–25 minutes, or until the crust is golden brown and the filling is bubbling gently around the edges.
- Cool completely in the pan, then chill for 30 minutes before slicing into squares for the cleanest cuts.
Notes
- vanilla ice cream
- light dusting of powdered sugar
- whipped mascarpone cream
- add ½ tsp orange zest to the cherry filling
- brush lattice with egg wash for a shinier crust
- sprinkle coarse sugar instead of regular sugar for crunch
Tips & Tricks
Optional Bakery-Level Upgrades for the Filling
Add 1 tablespoon butter to the hot filling and stir until melted. This gives the filling a silky sheen, a slightly richer flavor, and prettier slices once cooled. You can also add ½ tsp orange zest. It adds a bright citrus note that lifts the cherries and balances their sweetness, giving the filling a fresher, more layered flavor.
Bakery Trick for a Crisp Slab Pie Crust
Blind-set the base for 8 minutes:
- Roll dough and line the pan.
- Prick lightly with a fork.
- Bake 8 minutes at 375°F / 190°C.
- Add filling and lattice.
- Bake normally.
Why it works: The base crust sets before the cherry juices hit it, preventing sogginess and keeping the bottom crisp.
A Little Extra Flair: How to Weave a Proper Lattice
- Lay half the strips diagonally across the cherry filling, all running in the same direction, spaced evenly.
- Starting from the center: Fold back every other strip halfway.
- Place one new strip across them diagonally in the opposite direction.
- Fold the strips back down over the new strip.
- Now fold back the opposite alternating strips (the ones you didn’t move before).
- Lay another strip across.
- Fold those strips back down.
- Repeat this process, alternating which strips you fold back each time, until the whole pie is woven.
- Trim excess dough and gently press the ends into the edges of the crust to seal.
Another Small Trick for Perfect Squares
After baking, let the slab pie cool completely, then refrigerate 30 minutes before cutting. Cold filling firms up, so the knife cuts sharp clean squares instead of soft edges. Use a long chef’s knife and wipe it between cuts.

Instructions
