Τι ειν’ αυτό που το λεν’ Pumpkin Spice;!

Αν είστε λιγάκι foodie και σερφάρετε συχνά σε site σαν το Food Network και το Martha Stewart Living , σε food platforms σαν το Yummly ή το Allrecipes, παρακολουθείτε σεφ στο YouTube και σε μπλογκ ή τριγυρνάτε στο Pinterest και το Foodgawker, με το που «τελειώνει» το καλοκαίρι –έχει δεν έχει προλάβει να βγει ο Αύγουστος– και αρχίζει το φθινόπωρο –κι ας έχει ακόμα 35 βαθμούς και εσύ κυκλοφορείς με τη σαγιονάρα– δύο λέξεις αρχίζουν να μονοπωλούν το διαδίκτυο (και να σου σπάνε ενδεχομένως και τα νεύρα). Pumpkin Spice. H λίστα είναι ατελείωτη:

  • pumpkin spice scones, να συνεχίσω;…
  • pumpkin spice waffles

  • pumpkin spice donuts, βλέπετε πως πάει, έτσι;;…

  • μέχρι και pumpkin spice pizza έχω δει!

Η αλήθεια είναι πως όταν κάτι γίνεται trend κάπου στραβώνει το πράγμα. Στην περίπτωση του pumpkin spice, είναι πραγματικά κρίμα (που έγινε trend εννοώ) γιατί πρόκειται για ένα υπέροχο υλικό που έχει όμως αρχίσει να κουράζει λόγω της τάσης pumpkin-spice-everything! Στην Ελλάδα δεν είναι ακόμα τόοοσο διαδεδομένο και το πιθανότερο είναι να αναρωτιέστε «τι είναι πια αυτό το pumpkin spice;» και το κυριότερο «που μπορώ να το βρω –αφού λυσσάξαν όλοι– και θέλω να το δοκιμάσω;»

Είναι λοιπόν, ένα μείγμα μπαχαρικών με κυρίαρχα τα αρώματα της κανέλας, του γαρύφαλλου, του τζίντζερ & του μοσχοκάρυδου, που χρησιμοποιείται στην Αμερικανική κουζίνα  για την παρασκευή της κλασικής γλυκιάς κολοκυθόπιτας, ένα τυπικό φθινοπωρινό γλυκό, επίσης άρρηκτα συνδεδεμένο και με το γεύμα των Ευχαριστιών. Ο συνδυασμός των εν λόγω μπαχαρικών αναδεικνύει μοναδικά τη γεύση της κολοκύθας και το «πάντρεμά» τους έμελλε, τα τελευταία χρόνια, να αρωματίσει (επιτυχώς) από κεριά & καλλυντικά μέχρι (ανεπιτυχώς) σκυλοτροφή & βότκα!

Εγώ θα σας δείξω πως να φτιάξετε το δικό σας (απείρως καλύτερο από τα έτοιμα που θα βρείτε στο Amazon) για να το χρησιμοποιήσετε σε κουλουράκια & κέικ, στον cappuccino σας αντί για κανέλα ή σοκολάτα, αλλά και σε ρόφημα ζεστής κλασικής ή άσπρης σοκολάτας – και θα με θυμηθείτε!

Υλικά:

  • 1 κουταλιά της σούπας τριμμένη κανέλα
  • 2 κουταλάκια του γλυκού τριμμένο τζίντζερ
  • ½ κουταλάκι του γλυκού τριμμένο μπαχάρι
  • ½ κουταλάκι του γλυκού τριμμένο γαρύφαλλο
  • ½ κουταλάκι του γλυκού τριμμένο μασίς*
  • ½ κουταλάκι του γλυκού τριμμένο μοσχοκάρυδο

Φυλλάσετε σε καλά σφραγισμένο βαζάκι έως και 1 χρόνο!

*Το μασίς είναι γνωστό –λανθασμένα– και ως «ανθός μοσχοκάρυδου». Στην ουσία δεν έχει καμία σχέση με άνθος αλλά πρόκειται για το επίσπερμο κάλυμμα του μοσχοκάρυδου (ένα περίβλημα που μοιάζει με κέρινο & αγκαλιάζει τον καρπό).  Οταν είναι φρέσκο έχει λαμπερό κόκκινο χρώμα, ενώ όταν ξεραθεί, γίνεται από πορτοκαλί έως κρεμ-καφέ. Έχει εξαιρετικό άρωμα αλλά γεύση πιο ήπια από του μοσχοκάρυδου και ταιριάζει σε σάλτσες, σούπες & μαγειρευτά. Θα το βρείτε στα καλά μπαχαράδικα, συνήθως ολόκληρο αλλά τρίβεται εύκολα στο μούλτι ή στο ειδικό αξεσουάρ του μπλέντερ για τα μπαχαρικά. Εάν δεν καταφέρετε να το βρείτε απλά παραλείψτε το, και χρησιμοποιήστε μόνο το μοσχοκάρυδο στο μείγμα.

Ingredients:

  • 1 tablespoon ground cinnamon
  • 2 teaspoons ground ginger
  • ½ teaspoon allspice
  • ½ teaspoon ground cloves
  • ½ teaspoon ground mace
  • ½ teaspoon ground nutmeg

Measure out your ingredients carefully—if you go down the list in a hurry, it’s rather possible to misread quantities or to leave a spice out! Make sure you double-check and take your time!

Whisk to combine. Store in an airtight container for up to a year!

    I just tried your awesome pumpkin spice recipe with some sweetened and thickened (I used glutinous rice flour) milk. The result is a wonderful pumpkin spice latte perfect for the cold and humid days like here now.

        Hello Athina, here it is for YOU! DIY Poultry Seasoning: one tablespoon Coleman’s Dry Mustard, one tablespoon Greek Oregano, one tablespoon Lemon-Pepper, One teaspoon Cumin, one teaspoon ground sage, one teaspoon onion salt, one teaspoon garlic powder, one teaspoon dill weed (ground), add all spices in a bowl, mix together, transfer to an airtight container and store in a dry location! P.S.: I realize as I'm posting this that several online shops are swamped with orders during lockdowns and have decided to go on a brief halt. Also, keep in mind that all shipments are susceptible to delays due to Covid-19 restrictions. My post is only meant to inspire you and not to overwhelm you in any way. If you like the look and wish to go for it, you can totally DIY it—or do something similar—with whatever materials you have at hand. To recreate these particular baubles, use matte black spray-paint and give your old ones a coat or two. Use a small paintbrush and mod-podge to draw snowflakes (or any other shape you 🖤), sprinkle with gold glitter, and voilà! Things should get better. Be patient, keep your chin up, and get creative—it helps battle the blues.
