Easter Cookies – Πασχαλινά κουλουράκια
Originally published: March 19, 2018 – Updated: April 2025
Even though I have to admit I’m partial to Easter bread—Colomba Pasquale, Pinca, Velikonocni Kruhki, Challah, Tsoureki, Hot Cross Bun, you name it—Easter cookies are the next best thing. There are many, MANY recipes for traditional Greek Easter cookies, with dozens of different variations depending on their region of origin. They can vary from more buttery to eggy and from soft and chewy to super crumbly. They’re usually fragrant with citrus, scented waters, or spices like mastic, mahleb, or cardamom, and they’re not typically frosted (but they can be sprinkled with sesame or sugars). They are molded into all sorts of shapes that have yet to be properly registered—and if you ask me, this would be an extremely interesting project!
If you haven’t tried them yet, give this recipe a chance. It uses a combination of brown and icing sugar to make really crumbly cookies scented with orange or lemon zest. They are the best when dunked into coffee, tea, or milk. You’ll now find updated instructions in the recipe card on how to twist your dough into charming little bunnies.

Greek Easter Cookies
Ingredients
- 1 ⅔ cup butter melted (410 ml)
- ⅔ cup brown sugar (160 g)
- 1 cup & 1 tsp confectioner’s/icing sugar (spoon and level, 125 g)
- 3 eggs (1 is for brushing the cookies)
- zest from 1 orange/lemon
- 1 tsp baking powder
- 6¼ cups all-purpose flour (spoon and level, 750 g) – you may need a little more
- 1 tbsp milk (for brushing the cookies)
- mini chocolate chips (only needed if you want to shape cookies into bunnies)
Instructions
- Melt the butter on low heat and use it while it's still warm. Be careful, as it mustn't be on the hot side! Add the melted butter and sugar (both kinds) to a large bowl and mix well until incorporated.
- Add the remaining ingredients: the two eggs, orange or lemon zest, baking powder, and flour. Knead well until you get a smooth dough. It will be very soft and sticky; you can add about ½ cup more flour, but resist the urge to add more than that. Instead, bundle the dough in plastic wrap or wax paper and let it sit in the fridge for 40 minutes.
- When the dough is nicely chilled, form small cookies. Several common traditional patterns (“braids,” “snails,” “boats,” “S” shapes, etc.) are customary in Greece, but you can go for any shape you like. In the meantime, make sure you preheat the oven to 375 °F.
- Arrange the cookies on a non-stick baking sheet. Slightly beat one egg with a tablespoon of milk and brush the cookies.
- Bake at 325-350 °F for 20-25 minutes until golden brown.
To shape the cookies into bunnies:
- To make the bunny's body, roll a small piece of dough (about an ounce) into a string and coil it into a snail shape.

- Roll another piece of dough (about ½ to ¾ ounce) into a string and bend it into a soft v shape. Attach it sideways on top of the “snail.” Add a chocolate chip for the eye.
- Finally, roll a pea-sized piece of dough into a ball to form the bunny’s tail!
Notes
- The brown sugar will not dissolve/incorporate well If you don’t use warm melted butter. The combination of brown and icing sugar will give you extra crumbly cookies, which we’re looking for in this recipe. That said, you can use any sugar you like.
- Using the warm butter will result in a very soft, sticky dough that will be tough to work with—you will be tempted to keep adding flour to it, only to end up with a stiff dough that will make stiff cookies. Don’t skip the chilling part!
- You can keep the dough refrigerated (in plastic wrap or wax paper) for up to 1 week to bake fresh batches at will.
- We don’t typically frost this type of Easter cookies, but you do you. They are best kept in an air-tight container.
Tip: What Is the Spoon-and-Level Method?
The spoon-and-level method is the most accurate way to measure dry ingredients like flour, cocoa, or powdered sugar without a scale.
1. Fluff the ingredient in its container to loosen it up.
2. Spoon it gently into your measuring cup—never scoop directly with the cup, or you’ll pack it in and use too much.
3. Level off the excess with the flat edge of a knife or spatula.
Why it matters? A packed cup of flour can weigh up to 50% more than it should—turning your cookies into bricks!

Ingredients
Instructions

Notes
