Baked Anchovies with Tomato and Herbs
(Γαύρος στον φούρνο – A Rustic Greek Oven Dish).
A Taste of the Greek Coast
In many Greek kitchens, anchovies are the quiet heroes of the sea. Small, humble, and often overlooked, they transform into something remarkable when paired with olive oil, tomatoes, and fresh herbs. This dish—Greek Baked Anchovies aka Γαύρος στον Φούρνο—is a rustic oven-baked anchovy recipe that captures the essence of Mediterranean home cooking.
The magic lies in simplicity: sweet tomatoes, fragrant garlic, a touch of oregano, and generous parsley baked gently over fresh anchovies. The result is a dish that tastes like a seaside taverna. Bright, savory, and deeply comforting! Serve it warm with crusty bread, roasted potatoes, or a crisp Greek salad, and you have a meal that feels both effortless and deeply traditional.

How to Make Greek Baked Anchovies (Gavros Ston Fourno)

Baked Anchovies with Tomato and Herbs
Ingredients
- 2 lb fresh European anchovies (900 g) cleaned and gutted
- 3 tbsp extra virgin olive oil
- salt & freshly ground pepper
- ½ tsp oregano dried
- 1 can diced tomatoes usually 14 oz/400 g
- 1 tbsp tomato paste
- 3 garlic cloves finely minced
- ¼ tsp sugar
- 1½ cups fresh parsley (45–60 g) finely chopped
- 1-2 tsp lemon zest or fresh lemon juice (optional)
- 2 tsp green garlic or spring onion tops (optional) finely chopped
Instructions
Prepare the Anchovies
- Rinse 2 lb fresh European anchovies under cold water and gently remove the innards and gills. Pull off the heads if still attached. Rinse again to remove any remaining bits.
- Place the cleaned anchovies in a colander and allow them to drain for 20–30 minutes in the refrigerator.

Preheat the Oven
- Preheat your oven to 400°F/200°C
- Drizzle 1 tablespoon olive oil into a large baking dish and spread evenly.
- Arrange the anchovies in a single layer in the dish. Season lightly with salt & freshly ground pepper, and ½ tsp oregano.
Prepare the Tomato Herb Sauce
- In a bowl combine 1 can diced tomatoes, 1 tbsp tomato paste, 3 garlic cloves (minced), ¼ tsp sugar, 1 cup chopped parsley, remaining olive oil. Mix well and season lightly with salt and pepper.
Assemble the Dish
- Spoon the tomato mixture evenly over the anchovies.
- Sprinkle the remaining ½ cup parsley over the top.
- For extra brightness, add a little lemon zest if desired.
Bake
- Place the dish on the center rack of the oven and bake for 20–25 minutes. The anchovies should be tender and the tomato sauce bubbling with slightly caramelized edges.
Finish and Serve
- Remove from the oven and sprinkle with 2 tsp green garlic or spring onion tops.
- Drizzle lightly with olive oil and add a squeeze of lemon if desired.
- Serve warm with crusty bread.
Notes
- warm crusty bread
- a traditional Greek salad with feta
- a glass of crisp white wine or chilled retsina
Small Chef Tips
- Choose shiny anchovies with clear eyes and firm flesh.
- Good tomatoes matter—Mutti, KYKNOS, or any good-quality Italian or Greek canned tomatoes will elevate the dish.
- Parsley goes in twice (in the sauce and on top) to layer flavor.
- A slightly hot oven caramelizes the tomato edges beautifully.
