Greek Milk Pie – Γαλατόπιτα

Milk pies are very common in many parts of Greece, but have originated from the Greek Vlach communities (famous for their shepherding skills), residing once in the mountains of central Greece. A milk pie, called a ga-la-tò-pi-ta in Greek, even though very similar to, is not to be mistaken with, the famous Greek Galaktoboureko or the Bougatsa, whose recipes call for two different, specific, and unique kinds of phyllo-pastry.

The galatòpita is made with the more common, rustic phyllo-pastry of the kind you’d use for any traditional Greek pie recipe. Now I’m not gonna lie! I got lazy and used store-bought phyllo pastry, but I promise to share my mom’s recipe for authentic, homemade Greek phyllo with you in due time. Ingredients

  

• 50 g butter (1.76 oz)
• 1 package thick phyllo or puff-pastry, fresh or frozen (630 to 750 g/22 to 26 oz)
• 2000 ml milk (70 Fl.oz)
• 4 medium eggs organic
• 1 ½ cups finely-ground durum-wheat semolina
• 1 cup sugar
• 1 tsp Ceylon cinnamon ground

For the pie crust

• 50 g butter (1.76 oz)
• 1 small egg organic
• ½ cup milk (125 ml/4.2 Fl.oz)

To serve

• powdered/icing sugar
• ground Ceylon cinnamon

Instructions

 

• Grease a 12" round x 2" deep baking pan with a little butter.
• Lay 1 phyllo sheet in the pan. Make sure it goes all the way up around the sides and overlaps, so that can be folded over the filling later.
• Scatter small pieces of butter on top.
• Preheat the oven at 200 °C (390 °F).
• In a large pot, warm up the milk on medium heat. Be careful—you are going to add the eggs next and you don’t want to cook them before they blend in, so the milk shouldn’t get hot.
• Whisk the eggs in a separate bowl. Add them to the pot and stir in slowly until they're well incorpotated.
• Add the cinnamon and sugar.
• Maintain medium heat and keep stirring so that the sugar is dissolved.
• Add the semolina and keep stirring steady and slowly until you have a thick porridge
• When you can spot a few hot bubbles bursting on the surface, take the pudding off the fire.
• Transfer the pudding over the phyllo pastry and spread evenly with a spatula.
• Fold the overlapping sides above the filling.
• Beat up the extra egg with ½ cup of milk and brush it over the entire surface.
• Scatter more pieces of butter on top. These will help create a crust on the “bare” pudding, not overlapped by pastry.
• Bake on the middle rack at 200-250 °C (390-480 °F) for 20 minutes.
• When off the oven and cooled down, sprinkle with powder/icing sugar and ground cinnamon.

Notes

Thick Greek pie phyllo is a bit of a confusing issue as different brands offer all sorts of different versions. Fresh or frozen, it can come in 2 quite thick pieces per pack or not as thick in 6 pieces, weighing anything from 630 to 750 g/22-26 oz, and measuring approximately 18″ x 14″. You can use 1 thick sheet for a 12″ round baking pan or 3 (out of the 6 total) thinner ones. If you use a larger pan you can always trim and tack the remaining phyllo sheet/sheets to suit your needs. You can also use phyllo on top (as in the recipe photo), but we prefer ours single-crust.

Now—this one is not a pie you want to eat warm. You should let it cool down for at least a couple of hours. In my humble opinion, even though some will argue that the pastry will get soft, it gets even better after you’ve let it sit in the fridge overnight. It’s perfect for breakfast on a hot summer morning.

• 50 γραμ. βούτυρο
• 1 συσκευασία φύλλο χωριάτικο ή σφολιάτας
• 2 λίτρα γάλα
• 4 μεσαία αυγά βιολογικά ή ελευθέρας βοσκής
• 1 ½ κούπα σιμιγδάλι ψιλό (375 γραμ.)
• 1 κούπα ζάχαρη (250 γραμ.)
• 1 κουταλάκι του γλυκού κανέλα Κεϋλάνης τριμμένη

Για την επιφάνεια της πίτας

• 50 γραμ. βούτυρο
• 1 μεσαίο αυγό
• ½ κούπα γάλα (125 ml)

Για το σερβίρισμα

• ζάχαρη άχνη
• κανέλα Κεϋλάνης τριμμένη

Instructions

 

• Βουτυρώνετε ένα μεγάλο, στρογγυλό ταψί (30 εκ.) και απλώνετε το φύλλο – 1 χωριάτικο ή 3 σφολιάτας. Βεβαιωθείτε ότι καλύπτει τις πλευρές του ταψιού γύρω γύρω και περισσεύει, έτσι ώστε να μπορέσετε να το διπλώσετε αργότερα πάνω από τη γέμιση.*
• Σκορπίζετε πάνω του μερικά κομματάκια βουτύρο.
• Βάζετε το γάλα σε μια μεγάλη κατσαρόλα και το αφήνετε να ζεσταθεί λίγο, σε μέτρια φωτιά. Προσοχή, δεν πρέπει να κάψει.
• Χτυπάτε τα αυγά σε ένα μπολάκι και τα προσθέτετε στο γάλα. Ανακατεύετε αργά και σταθερά μέχρι να ενσωματωθούν καλά.
• Προσθέτετε την κανέλα και τη ζάχαρη.
• Μόλις λιώσει η ζάχαρη, ρίχνετε σιγά σιγά το σιμιγδάλι και συνεχίζετε το ανακάτεμα προσεκτικά μέχρι να πήξει η κρέμα.
• Όταν αρχίσουν να σχηματίζονται φουσκάλες στην επιφάνεια (μόλις αρχίσει δηλαδή να βράζει ελαφρώς), αποσύρετε την κατσαρόλα.
• Απλώνετε την κρέμα πάνω στο φύλλο. Ισιώνετε την επιφάνεια με μια σπάτουλα. Διπλώνετε τις άκρες του φύλλου πάνω από τη γέμιση.
• Χτυπάτε ένα αυγό σε μισή κούπα γάλα και με ένα πινελάκι ζαχαροπλαστικής αλείφετε προσεκτικά την επιφάνεια της πίτας.
• Σκορπίζετε το βούτυρο σε κομματάκια.
• Ψήνετε σε προθερμασμένο φούρνο, στη μεσαία σχάρα, στους 200-250 °C για 20 περίπου λεπτά.

Notes

H γαλατόπιτα τρώγεται κρύα! Προσωπικά, αν και «οι ειδικοί» ισχυρίζονται πως μαλακώνει το φύλλο, πιστεύω πως είναι ακόμα καλύτερη αν μείνει ένα βράδυ στο ψυγείο. Πασπαλίζετε με ζάχαρη άχνη και κανέλα και έχετε το τέλειο πρωινό για τις ζεστές καλοκαιρινές μέρες.
