Greek Semolina Halva – Χαλβάς Σιμιγδαλένιος

Halva (also halvah, halwa, and other spellings, pronounced hal-vàs in Greek) is a traditional dessert of Arabic origin, probably brought to Greece through the Middle East/Turkey. Two types are mainly popular in Greece & Cyprus: the flour-based one, made from grain flour like semolina or cornstarch—while other primary ingredients include clarified butter or olive oil, wheat flour, and sugar—and the nut butter-based type, made from tahini or other nut butters.

Halva’s cultural renderings are quite interesting: In Greek culture, it is a traditional fasting food for all of Great Lent and other fasting periods. In Afghanistan, Turkey, and Iran, after a burial ceremony, on the seventh and fortieth day, and also on the first year anniversary, semolina or flour halva is cooked and offered to visitors and neighbors by relatives of the deceased to commemorate them. In Ukraine halva (халва) is made from a paste of ground sunflower seeds and oil. Sunflowers are Ukraine’s national flower and represent the warmth and power of the sun in folk imagery, making halva a popular snack (also associated with Christian Orthodox Lent practices).

A typical Greek flour-based method invloves frying flour (such as semolina) in oil, mixing it into a roux, and then cooking it with a sugary syrup.

A reference to halva appears in the 7th century, referring to a mixture of mashed dates with milk. By the 9th century, the term was applied to numerous sweets, including the now-familiar sweetened fried semolina paste.

Equipment

  • Tall pasta pot

Ingredients
  

Syrup

  • 3 cups sugar
  • 4 cups water
  • 1 stick Ceylon cinnamon
  • 3 whole cloves
  • 1 piece lemon skin

Halva

  • 1 cup olive oil extra virgin
  • 2 cups finely-ground durum-wheat semolina
  • 1 cup almonds blanched
  • ⅓ cup pine nuts

Serving Options

  • ground Ceylon cinnamon
  • toasted sesame seeds
  • toasted crushed pine nuts
  • toasted almond flakes
  • pomegranate seeds
  • crushed pistachios

Instructions
 

  • Toast your almonds and pine nuts in a hot frying pan for a couple of minutes until they become golden-brown. (You don’t need to add any extra oil or butter to the pan.)
  • Use a medium-sized pot to boil the water with sugar, lemon skin, the stick of cinnamon, and cloves, for 5-6 minutes.
  • Meanwhile, in a tall pasta pot (I will soon explain why), warm up the olive oil—don’t let it get sizzling hot!
  • Add the semolina and stir slowly to semi-fry it, for 7-9 minutes, on medium heat. The common practice is to stir-fry it for as long as 20 minutes, but in my opinion, the semolina becomes aromatic enough within the first 5′. If you let it fry a bit longer, it will turn even more golden, but if you go for more than 10 minutes, it will acquire a rather intense taste, and you also run the risk of burning it. Don’t forget that olive oil reaches its smoking point somewhere between 360-400 ºF (180-200 ºC), which basically means you shouldn’t cook in it.
  • Use a slotted ladle to remove the cinnamon stick, cloves, and piece of lemon skin from the syrup.
  • Pour the syrup slowly over the semolina. Be extra careful because it will sizzle, bubble and steam up like hell—this is where the tall pasta pot comes in handy!
  • Turn off the heat, add the almonds & pine nuts, and stir until you get a thick porridge.
  • Empty the porridge in a square or rectangular cake pan or small bowls and use a maryse spatula to smooth down the surface.
  • Let it cool at room temperature (do not place it in the fridge). When it is time to serve, unmould it onto a platter (or a serving plate if you are using small bowls).
  • Sprinkle with cinnamon or serve with any of the nut & seed options I’m offering—my favorites are the fresh pomegranate seeds and the crushed pistachios.

Η πιο γνωστή μέθοδος ονομάζεται και «Ένα, δύο, τρία, τέσσερα» από τις αναλογίες των συστατικών (κατά όγκο) σύμφωνα με τη σειρά που χρησιμοποιούνται, δηλαδή: 1 μέρος λάδι - 2 μέρη σιμιγδάλι - 3 μέρη ζάχαρη - 4 μέρη νερό

Για το σιρόπι

  • 4 κούπες νερό (1000 ml)
  • 3 κούπες ζάχαρη (750 γρ)
  • 1 ξυλάκι κανέλα Κεϋλάνης
  • 3 πρόκες γαρίφαλο
  • 1 φλούδα λεμόνι

Για τον χαλβά

  • 2 κούπες σιμιγδάλι (500 γρ)
  • 1 κούπα ελαιόλαδο (250 γρ)
  • 1 κούπα αμύγδαλα ξασπρισμένα και καβουρδισμένα
  • ⅓ της κούπας κουκουνάρι καβουρδισμένο

Επιπλέον προτάσεις σερβιρίσματος

  • καβουρδισμένο σουσάμι
  • καβουρδισμένο αμύγδαλο φιλέ
  • φρέσκο ρόδι (σπόροι)
  • φιστίκια Αιγίνης τριμμένα

Instructions
 

  • Καβουρδίζετε τα αμύγδαλα και τα κουκουνάρια για μερικά λεπτά μέχρι να πάρουν χρώμα. (Δεν χρειάζεται να προσθέσετε επιπλέον λάδι ή βούτυρο στο τηγάνι.)
  • Σε μια κατσαρόλα μεσαίου μεγέθους βράζετε το νερό με τη ζάχαρη, τη φλούδα λεμονιού, την κανέλα και τα γαρίφαλα, για 5-6 λεπτά.
  • Εν τω μεταξύ, σε μια ψηλή κατσαρόλα ζυμαρικών (σύντομα θα εξηγήσω γιατί), ζεσταίνετε το ελαιόλαδο – προσοχή, μην το αφήσετε να κάψει.
  • Προσθέτετε το σιμιγδάλι και ανακατεύετε αργά, για 7-9 λεπτά, σε μέτρια φωτιά. Η συνήθης πρακτική είναι να το καβουρδίζουμε για αρκετή ώρα, αλλά κατά τη γνώμη μου γίνεται αρκετά αρωματικό μέσα στα 5 πρώτα λεπτά. Εάν το αφήσετε λιγάκι περισσότερο, θα πάρει ακόμη πιο χρυσαφένιο χρώμα, αλλά αν συνεχίσετε το καβούρδισμα για πάνω από 10 λεπτά, θα αποκτήσει πιο βαριά γεύση και διατρέχετε επίσης τον κίνδυνο να το κάψετε.
  • Με μία τρυπητή κουτάλα αφαιρείτε το ξύλο κανέλας, τα γαρίφαλα και τη φλούδα λεμονιού από το σιρόπι.
  • Ρίχνετε το σιρόπι αργά στο σιμιγδάλι. Να είστε πολύ προσεκτικοί γιατί κοχλάζει και φουσκώνει – εδώ είναι που βοηθάει η ψηλή κατσαρόλα!
  • Ανακατεύετε καλά μέχρι να χυλώσει ο χαλβάς (θα γίνει σχεδόν στιγμιαία).
  • Βγάζετε την κατσαρόλα από την φωτιά, προσθέτετε τα αμύγδαλα και τα κουκουνάρια και ανακατεύετε λίγο ακόμα.
  • Αφήνετε τον χαλβά να κρυώσει λιγάκι και τον βάζετε σε οποιαδήποτε φόρμα κέικ ή τετράγωνο αντικολλητικό ταψί ή ατομικά μπολάκια. Μην ξεχάσετε να ισιώσετε την επιφάνεια με μια σπάτουλα, ειδικά αν χρησιμοποιήσετε ταψάκι. Όταν έρθει η ώρα να σερβίρετε, ξεφορμάρετε και κόβετε σε κομμάτια-μερίδες ενώ τα μπολάκια εξυπηρετούν και ως φόρμες αλλά και για να τα σερβίρετε ως έχουν.
  • Πασπαλίζετε με κανέλα και μην αγνοήσετε τις προτάσεις σερβιρίσματος που αναφέρω παραπάνω – οι αγαπημένες μου εναλλακτικές είναι το ρόδι και τα φιστίκια Αιγίνης.

Notes

Προσωπικά δεν αφήνω το λάδι να κάψει και δεν καβουρδίζω για ώρα το σιμιγδάλι. Θεωρώ πως στις κλασικές συνταγές καίγονται αχρείαστα και υπερβολικά και τα δύο με αποτέλεσμα έναν βαρύ χαλβά με έντονη (με την κακή έννοια) γεύση.
Για να κάνετε τη ζωή σας εύκολη χρησιμοποιήστε μια ψηλή κατσαρόλα σαν αυτή που βράζουμε τα μακαρόνια: θα βοηθήσει πολύ όταν θα ρίξετε το καυτό σιρόπι στο καβουρδισμένο σιμιγδάλι γιατί γλυτώνετε κάψιμο! Για το σερβίρισμα μπορείτε να χρησιμοποιήσετε τετράγωνο ταψάκι, φόρμα κέικ ή ατομικά μπολάκια.

    Αθάνατο γλυκό, με χιλιάδες μνήμες φορτωμένο, όπως όλα θέλει αγάπη, δέχεται και πειραματισμούς ενίοτε. Μαζί με τα καβουρντισμένα αμύγδαλα και κουκουνάρια για πολλούς ταιριάζουν τέλεια και οι ξανθές σταφίδες. Ενδιαφέρουσα επίσης παραλαγή γίνεται με φυστίκια Αιγίνης.

      Εμένα προσωπικά, ούτε που ξέρω το γιατί, οι σταφίδες στο χαλβά δεν μου αρέσουν! Τα φυστίκια Αιγίνης όμως είναι πολύ καλή πρόταση και δεν τα είχα σκεφτεί μέχρι τώρα. Κλέβω την ιδέα σου και θα κάνω edit την ανάρτηση για να τα προσθέσω! 🙂 Επίσης, όπως έγραψα και πρόσφατα σε κάποιο σχετικό post φίλης, αντί να “πασπαλίσουμε” με καννέλα (ή σουσάμι ή αμύγδαλο) μπορούμε να γαρνίρουμε με ρόδι. Τον κάνει πιο δροσερό και διαφορετικό!

To recreate these particular baubles, use matte black spray-paint and give your old ones a coat or two. Use a small paintbrush and mod-podge to draw snowflakes (or any other shape you 🖤), sprinkle with gold glitter, and voilà! Things should get better. Be patient, keep your chin up, and get creative—it helps battle the blues.

P.S.: I realize as I'm posting this that several online shops are swamped with orders during lockdowns and have decided to go on a brief halt. Also, keep in mind that all shipments are susceptible to delays due to Covid-19 restrictions. My post is only meant to inspire you and not to overwhelm you in any way. If you like the look and wish to go for it, you can totally DIY it—or do something similar—with whatever materials you have at hand. To recreate these particular baubles, use matte black spray-paint and give your old ones a coat or two. Use a small paintbrush and mod-podge to draw snowflakes (or any other shape you 🖤), sprinkle with gold glitter, and voilà! Things should get better. Be patient, keep your chin up, and get creative—it helps battle the blues.
