Homemade Maple Granola
Light, Crisp & Perfectly Toasted.

There’s something undeniably cozy in the way homemade granola fills the kitchen with warm, toasted sweetness and turns a simple breakfast into a small ritual! My maple granola edit is deeply golden, perfectly crisp, and endlessly adaptable, built from ingredients you likely already have. After a few tweaks to the original version, I’ve landed on a balance that delivers crunch without heaviness, and flavor without excess.

So, while the original recipe called for ¼ cup of sesame seeds, I thought it made the texture too grainy and decided to cut it down to only one tablespoon. You could make it two if you love sesame too much, but I wouldn’t use more than that. I also reduced the amount of olive oil to ⅓ instead of ½ cup. For added warmth and sweetness depth, I added a pinch of cinnamon and some vanilla extract. To amplify flavors, I used a little more salt and opted for flaky instead of coarse. Last but not least, in the original recipe, coconut flakes are added at the beginning with the rest of the ingredients. However, since the baking method truly yields a rich, golden brown granola, they tend to burn and turn bitter. Add them in the final 10 minutes instead, and they will turn out perfect. The recipe yields about 6–7 cups of granola, and you can use about ½ cup per serving.

Golden Brown Maple Granola
Ingredients
- 3 cups rolled oats (about 250–270 g)
- 1 cup coarsely chopped walnuts (or any nuts you like – about 120 g)
- ¼ cup brown sugar (60 g)
- ¼ tsp Ceylon cinnamon
- 1 tbsp sesame seeds
- 1¼ tsp flaky salt
- ⅓ cup extra virgin olive oil (80 ml)
- ½ cup maple syrup (125 ml)
- ½ tsp vanilla extract (optional)
- 1 cup unsweetened coconut flakes (80-100 g)
- ½ cup golden raisins (125 gr)
Instructions
- Preheat the oven to 300 °F/150 °C. Line a large baking sheet with parchment paper.
- Combine dry ingredients first (3 cups rolled oats, 1 cup coarsely chopped walnuts, ¼ cup brown sugar, ¼ tsp Ceylon cinnamon, 1 tbsp sesame seeds, 1¼ tsp flaky salt).
- In a separate bowl, whisk ⅓ cup extra virgin olive oil and ½ cup maple syrup (+ ½ tsp vanilla extract if using).
- Pour wet into dry and mix well until everything is evenly coated.
- Spread the mixture evenly onto the prepared baking sheet. Bake for 35–40 minutes, stirring every 10 minutes to ensure an evenly toasted, loose granola without large clusters.
- During the final 10 minutes of baking, stir in 1 cup unsweetened coconut flakes.
- Remove from the oven and let the granola cool completely on the tray. Once cooled, stir in ½ cup golden raisins.
- Transfer to an airtight container and store at room temperature for up to 2 weeks.
Notes
- Texture: This granola is intentionally loose and not clustered. Stirring throughout baking ensures a light, evenly toasted result.
- Sesame seeds: 1 tablespoon adds a subtle nuttiness without overpowering—feel free to increase slightly if you enjoy the texture.
- Coconut flakes: Adding them toward the end prevents burning and bitterness.
- Variations: Swap walnuts for almonds, pecans, or hazelnuts, or add a handful of sunflower or pumpkin seeds for extra texture.
Frequently Asked Questions
