Κεφαλονίτικη μπακαλιαρόπιτα – Traditional Ionian Codfish Pie
When the scent of the sea meets warm pastry in a Kefalonian kitchen, you get a pie that feels both humble and celebratory. Bakaliaropita, the island’s beloved cod pie, is one of those dishes that quietly carries generations of tradition in every bite. The Kefalonian codfish pie brings together flaked cod, sweet leeks, tomatoes, herbs, olive oil, and rice, all tucked into layers of crisp phyllo and baked until golden. Its filling is rustic, fragrant, and deeply Ionian in character—simple ingredients that somehow become something far greater than the sum of their parts.

In Greece, cod has a special place on the table every year on March 25th, when many households follow the tradition of eating fish during the celebration of the Annunciation and Greek Independence Day. Most families prepare the classic bakaliaros with skordalia, but on Kefalonia, the story sometimes takes a different turn. Instead of fried cod, the fish becomes the heart of a generous pie, transforming the familiar flavors of salt cod into something hearty and festive. If you’re looking for a delicious alternative for the holiday table, this Kefalonian codfish pie is a beautiful way to honor the tradition—golden, comforting, and unmistakably Greek!
How to Desalt Salt Cod (If Using)
Equipment
- large bowl or container
- sharp knife
- cutting board
Ingredients
- salt cod (for a codfish pie 4–4½ lb/1.8–2 kg before desalting and trimming)
- cold water
Instructions
Prep the fish
- Rinse the salt cod under cold running water to remove as much surface salt as possible.
- Using a small knife, remove as much skin as possible and check for any large bones. Removing the skin helps the fish desalt more evenly and makes it easier to flake later.
- Cut the cod into several large chunks so the water can circulate around the fish.
Soak and refrigerate
- Place the pieces in a large bowl and cover completely with cold water.
- Refrigerate and change the water every 6–8 hours.
- Most salt cod needs around 24 hours to desalt properly. Very thick pieces may take up to 36 hours.
Taste before using
- Before cooking, cut off a small piece and taste it. It should taste pleasantly seasoned but not overly salty.
- Once desalinated, the cod is ready to be cut into smaller pieces and flaked by hand for the filling of the codfish pie.

Kefalonian Codfish Pie (Bakaliaropita)
Equipment
- 14-inch round baking pan (36 cm)
- rolling pin long, straight
Ingredients
For the dough
- 4 cups all-purpose flour (500 g) spooned and leveled
- ¼ tsp salt
- ¼ tsp sugar
- ½ cup extra virgin olive oil (120 ml)
- ½ cup dry white wine (120 ml)
- ¾-1 cup water (200 ml) as needed
For the filling
- 3–3½ lb cleaned cod fillet roughly 4 lb frozen cod before trimming (1.5 kg cleaned or about 1.7 kg frozen)
- 1 cup yellow onions (about 250 g) finely chopped
- 2 cups leeks (about 500 g) sliced into rings – white part only
- 5-6 tbsp extra virgin olive oil (75-90 ml)
- 2 medium tomatoes (340 g) peeled and grated
- 1 tbsp tomato paste (15 g)
- 2-3 garlic cloves pressed
- ½ cup fresh parsley (125 g) chopped
- ½ cup extra virgin olive oil (125 ml)
- freshly ground pepper
- salt (from ½ teaspoon to 1 tablespoon, depending on how salty the cod is)
- 1 cup Carolina rice* (250 g)
- ¼-½ cup water (60–120 ml) if needed, to help the rice cook
Final touches
- extra virgin olive oil
- sesame seeds
- water
Instructions
Prepare the dough (Rustic Phyllo)
- In a large bowl, combine 4 cups all-purpose flour, ¼ tsp salt, and ¼ tsp sugar. Add ½ cup extra virgin olive oil and ½ cup dry white wine, mixing with your hands until the mixture becomes crumbly.
- Pour in ¾-1 cup water little by little, kneading until a soft, smooth dough forms. It should be supple but not sticky.
- Knead for about 8–10 minutes, until the dough becomes elastic and smooth.
- Cover with a clean towel or plastic wrap and let it rest for 30 minutes. This allows the gluten to relax, making the dough easier to roll.
Prepare the filling
- Cut the cod fillet into small pieces and flake it by hand, separating it into fibers.
- In a deep frying pan, sauté 1 cup yellow onions and 2 cups leeks with 5-6 tbsp extra virgin olive oil until they soften and lightly caramelize.
- Peel 2 medium tomatoes and grate them, or blend them in a food processor. As a shortcut, you may also use 340 g canned grated tomatoes.
- In a large bowl, combine the flaked cod, sautéed onions and leeks, grated tomatoes, 1 tbsp tomato paste, pressed garlic cloves, ½ cup fresh parsley, and ½ cup extra virgin olive oil.
- Season with freshly ground pepper and salt, adjusting depending on how salty the cod already is.
- Add 1 cup Carolina rice* and mix everything well.**
Assemble the pie
- Divide the dough into two pieces, one slightly larger than the other. The larger piece will be used for the bottom crust. The smaller piece will cover the top.

- On a lightly floured*** surface, roll each piece into a round sheet slightly larger than the pan. The dough does not need to be extremely thin—it should be fairly thin but still sturdy, about ⅛ inch (3-4 mm) thick.
- Lightly grease a 14-inch (36 cm) round baking pan with olive oil.
- Lay the larger sheet of dough in the pan, pressing it gently into the bottom and sides. Let the excess dough hang slightly over the edges.
- Spread the cod filling evenly over the dough. Check its moisture level. Depending on how much liquid the tomatoes and fish release, add ¼-½ cup water (60–120 ml) to ensure the rice cooks properly during baking.
- Place the second sheet of dough over the filling.
- Fold the overhanging dough from the bottom layer over the top crust and crimp the edges (twist inwards) to seal.
- Brush the top with a little extra virgin olive oil and sprinkle with sesame seeds.
- You can also sprinkle a little water on the top crust before baking to help it crisp and blister beautifully. It’s a small detail, but very traditional.
- Bake in a preheated oven at 350–400°F (180–200°C) for about 1 hour and 10 minutes.
- Once baked, remove the pie from the oven and let it rest for about 30 minutes before cutting and serving. This allows the filling to set properly, making the pie easier to slice and helping the flavors settle.

Skål!
