My Mom’s Rice Pudding

My mom’s rice pudding recipe has a secret ingredient—that was not so secret back in the 80s!
Back in the day, when desserts were reserved for special occasions and celebrations, rice puddings (along with the classic custard cream) were a favorite treat. The typical Greek rice pudding is made with milk, sugar, short-grain (white) rice, cornstarch for thickness, lemon peel, vanilla for flavoring, and last but not least, ground cinnamon sprinkled on top (notice, no eggs). My mom’s rice pudding recipe uses sweetened condensed milk and vanilla-flavored corn flour, which help achieve a velvety cream texture.
A bit of history trivia
“Rice pudding is the descendant of earlier rice pottages, which date back to the time of the Romans, who, however, used such a dish only as a medicine to settle upset stomachs. There were medieval rice pottages made of rice boiled until soft, then mixed with almond milk or cow’s milk, or both, sweetened, and sometimes coloured. Rice was an expensive import, and these were luxury Lenten dishes for the rich. Recipes for baked rice puddings began to appear in the early 17th century.” — Davidson, Allan, and Tom Jane. Classic Greek Rice Pudding
Ingredients
- 1500 ml water (51.5 Fl.oz)
- 1 cup sweet rice (250 g/8.8 oz)
- 1 cup sugar (250 g/8.8 oz)
- 1-2 pieces lemon peel unwaxed
- 1 stick Ceylon cinnamon
- 1 can sweetened condensed milk (usually 304 ml/10.3 Fl.oz)
- 1 cup warm milk (8.5 Fl.oz) whole or reduced-fat
- 1 tbsp sugar
- 2 tbsp cornstarch (preferably vanilla flavored, but plain will do as well)
- 1 lemon or orange zest (optional)
Instructions
- In a medium saucepan, combine 1500 ml water, 1 cup sweet rice, 1 cup sugar, 1-2 pieces lemon peel, and 1 stick Ceylon cinnamon. Bring to a gentle boil over medium heat, then reduce to a steady simmer. Cook for 20–25 minutes, stirring frequently, until the rice is very tender and the mixture is thick and creamy. Add a splash of hot water if the pot dries out before the rice softens.
- Remove from heat and discard the lemon peel and cinnamon stick. Stir in 1 can sweetened condensed milk . Return the pot to low heat and warm gently — do not let it boil hard.
- In a bowl, whisk 1 cup warm milk with 1 tbsp sugar and 2 tbsp cornstarch until completely smooth. Slowly pour this mixture into the pot while stirring constantly.
- Cook over low heat, stirring continuously, until the pudding thickens and coats the back of a spoon, 3–5 minutes.
- Stir in the citrus zest (if using). Remove from heat and portion into bowls. The pudding will thicken slightly more as it cools.

Ingredients
Instructions
