Orange Mini-Muffins
Special Ingredient Game/Foodify Challenge #1

While I may not typically identify as a food blogger, a serendipitous invitation to join a foodie Facebook group “forced” me to interact with a remarkable community that has since become a source of inspiration and camaraderie. Within this vibrant online hub, my dear friend and fellow blogger, Eleni Anagnostopoulou, the girl behind My Easy Gourmet, orchestrated a delightful culinary challenge to motivate us to welcome the festive season with joy and creativity. With a theme centered around raffling a “special” ingredient, participants had to concoct a sweet or savory recipe by the looming deadline of December 15th.
Christmas morning breakfast bites: Orange Mini-Muffins
The anticipation of the challenge stirred our culinary imaginations, and I eagerly set out to craft my recipe with a simple yet versatile citrus—orange was our fortuitous “secret” ingredient! In the spirit of sharing the fruits (pun fully intended) of my labor and contributing to the collective merriment, I am ecstatic to present my unique take on some orange-infused mini muffins, perfect with a cup of coffee on a cold yet cozy Christmas morning.
