The ultimate pumpkin spice latte recipe

Those of you in the northern hemisphere, are you autumn struck yet? Is it getting chillier where you live? It’s still rather warm in Greece and a far cry from sweater-weather, but I have been yearning to get into the fall-baking mode regardless. And yes, cheesy as it may be, I love all things pumpkin spice and I have been known to sprinkle the stuff on my (still) iced coffee! Have you ever tried DIY-ing your own delicious mix at home? It’s super easy to concoct, plus you get to combine far more interesting ingredients—like mace—than the ones you’d find in a common store-bought blend.

Mace is probably mostly associated with the defensive pepper spray, but the real mace is the lacy, red outer coating that covers the shell around a nutmeg kernel! Once removed, it’s dried, and can be found and purchased as whole, golden-orange “blades”, although it’s usually sold ground. In terms of flavour, mace is very similar to nutmeg but more subtle and delicate. It can be used in baked goods, meat, and stews.   • 2 tbsp canned pumpkin/homemade pumpkin puree
  • 1 tbsp water (15 ml/0.5 Fl.oz)
  • 1/2 tsp pumpkin spice mix (find the link to DIY your own, in the recipe notes)
  • 2 tbsp sugar
  • 1/2 cup skimmed or non-dairy milk (250 ml/8.4 Fl.oz)
  • 2 tsp vanilla extract (10 ml/0.3 Fl.oz)
  • 2 shots espresso (or other strong coffee)

Instructions
  1. Place the pumpkin and the tablespoon of water in a non-stick saucepan, over medium heat. Add the spice mix and cook until it’s hot and it starts giving off a “baked” aroma (about 1-2 minutes).
  2. Add the sugar and stir until the mixture bubbles a tad and looks caramelized.
  3. Whisk in the milk and vanilla extract. Let it warm up but make sure it doesn’t boil over.
  4. Carefully transfer in a blender and beat until frothy.
  5. Make the espresso or other coffee and divide in two mugs. Add the frothed pumpkin milk.

Σε πείσμα του ελληνικού καιρού που συνήθως μας επιτρέπει να κυκλοφορούμε με μαγιώ στις παραλίες μέχρι τη μέρα που θα μας χτυπήσουν την πόρτα για να μας πουν τα κάλαντα, η μόδα του pumpkin spice εισήλθε επιτυχώς στα καθ’ ημάς μερικά χρόνια πριν – και γενικότερα καλά κρατεί, έστω κι αν το χαιρόμαστε περισσότερο κοντά στα Χριστούγεννα!

Για να φτιάξετε το δικό σας υπέροχο, φθινοπωρινό μείγμα μπαχαρικών (που θα χρησιμοποιήσετε σε ένα σωρό συνταγές εκτός από τη σημερινή) δεν έχετε παρά να ακολουθήσετε τη συνταγή που σας έχω δώσει από το 2015. Για τον λάτε pumpkin spice, οι περισσότερες καφετέριες περιορίζονται σε λίγη κανέλα με μοσχοκάρυδο –στο τσακίρ κέφι και λίγο τζίντζερ– και έτοιμο σιρόπι. Εννοείται ότι ο σπιτικός γίνεται με πραγματική κολοκύθα! Μη φοβάστε ότι θα έχει περίεργη γεύση ο καφές, το άρωμά της είναι πολύ διακριτικό και το χαρακτηριστικό που προσδίδει περισσότερο στο ρόφημά μας είναι η ιδιαίτερη γλυκύτητα. Σκεφτείτε τα καρότα στο carrot cake και θα καταλάβετε τι εννοώ. Αν δε θέλετε τόσο γλυκό καφέ μπορείτε να παραλείψετε τη ζάχαρη αλλά θα χάσετε κάτι από το καραμελωμένο άρωμα που παίρνει ο πουρές καθώς ψήνεται. Πουρέ κολοκύθας σε κονσέρβα, στην Αττική, θα βρείτε –επιτέλους!– στην Ηπειρώτισσα και στο Θανόπουλο ενώ για να φτιάξετε δικό σας σπιτικό, συστήνω τη συνταγή του Άκη Πετρετζίκη που την έχω χρησιμοποιήσει κι εγώ, με πολύ καλά αποτελέσματα.

Instructions
  1. Βάζουμε τον πουρέ κολοκύθας και το νερό σε ένα αντικολλητικό κατσαρολάκι. Προσθέτουμε το μείγμα μπαχαρικών και μαγειρεύουμε σε μέτρια θερμοκρασία για 1-2 λεπτά.
  2. Προσθέτουμε τη ζάχαρη και ανακατεύουμε προσεκτικά για να μη μας «πιάσει», μέχρι να καραμελώσει ελαφρώς η κολοκύθα.
  3. Συνεχίζοντας το ανακάτεμα, προσθέτουμε το γάλα και τη βανίλια και το αφήνουμε να ζεσταθεί χωρίς να βράσει.
  4. Το μεταφέρουμε προσεκτικά σε ένα μπλέντερ και το χτυπάμε.
  5. Φτιάχνουμε 2 δόσεις εσπρέσσο (ή άλλο δυνατό καφέ) σε δύο κούπες και μοιράζουμε το χτυπημένο γάλα κολοκύθας.

  • Αν θέλετε, σερβίρετε με σαντιγί και πασπαλίστε με ελάχιστο μείγμα pumpkin spice
  • Μπορείτε να χρησιμοποιήσετε κανονικό ή φυτικό γάλα της αρεσκείας σας
  • Προσοχή στο μπλέντερ όταν χειριζόμαστε ζεστά υγρά!

P.S.: I realize as I'm posting this that several online shops are swamped with orders during lockdowns and have decided to go on a brief halt. Also, keep in mind that all shipments are susceptible to delays due to Covid-19 restrictions. My post is only meant to inspire you and not to overwhelm you in any way. If you like the look and wish to go for it, you can totally DIY it—or do something similar—with whatever materials you have at hand. To recreate these particular baubles, use matte black spray-paint and give your old ones a coat or two. Use a small paintbrush and mod-podge to draw snowflakes (or any other shape you 🖤), sprinkle with gold glitter, and voilà! Things should get better. Be patient, keep your chin up, and get creative—it helps battle the blues.
