Ingredients
- 1/4 cup all-purpose flour (60 g)
- 1/4 cup sugar (60 g)
- 2 tbsp cocoa powder
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1 tsp gingerbread spice mix (find the link to DIY your own, in the recipe notes)
- 3 tbsp milk (dairy or non-dairy)
- 2 tbsp vegetable oil
- 1 tbsp water
- 1/4 tsp vanilla extract

Instructions
- Mix flour, sugar, cocoa powder, baking soda, salt, and gingerbread spice in a big, microwave-safe mug;
- Stir in milk, oil, water, and vanilla extract;
- Cook in the microwave at 800W until cake is done in the middle, for 2 minutes.
Recipe Notes
Optional: Sprinkle with some powdered sugar. And don't forget, it's easy peasy to make your own Gingerbread Spice Mix.
