1cuppeanut butter (homemade is best!)(250 g/0.55 lb)
1cuporganic coconut sugar(250 g/0.55 lb)
1 free rangeegg
Mix everything together well. Scoop cookies onto a lined cookie sheet. Bake for 10-12 minutes at 350 °F/180 °C.
Keep in mind that coconut sugar will make your cookies look a tad darker than peanut butter cookies usually do (they'll look almost chocolatey!). You can ofcourse use regular, granulated sugar if you choose to.
