Roasted Carrot Saffron Soup | Kicking Back the Pebbles

If you’ve been following Kicking Back the Pebbles for a while you must remember me talking time and again about Foodify —the foodie Facebook group that I’m a proud administrator of, along with five more amazing fellow bloggers!  Foodify has not only given us the opportunity to creatively express ourselves and practice our skills but, also, to interact with really talented people from several countries around the globe, form friendships, collaborate with foodie bloggers, participate in a bunch of interesting blogging events & games (check them out here & here) and grow our brands and sites together. As fall drew in more and more, it was high time for a new challenge/event to inspire our members’ creativity and help enjoy the season in our kitchens! So I’m more than excited to bring to you our…

Foodify Fall Soup Challenge

Recipes must include a seasonal veggie and/or legumes, and not exceed 6 total ingredients except for salt & pepper. The event will be open until Tuesday, October 27th so please make sure you check back here again since I will be updating from time to time, as members post their recipes, to link to every participant (scroll down, to the end of the post to peek at them all!). Here’s what I whipped up!

Roasted Carrot Saffron Soup | Kicking Back the Pebbles

Ingredients:
1 ½ pounds carrots, peeled and cut into 2-inch pieces
2 tablespoons olive oil
2 medium onions, diced
1 ½ teaspoon saffron threads
1500 ml. (about 6 cups) vegetable broth
½ cup light cream

Directions:

  1. Preheat oven to 400 °F.
  2. Toss carrots with 1 tbsp olive oil, salt & pepper in a large bowl. Make sure they are coated well. Spread in a single layer on a rimmed cookie sheet and bake until tender and brown in spots (about 30+ minutes).
  3. Heat the remaining 1 tbsp olive oil in a large pot over medium heat. Add the onions and cook until they begin to caramelize (about 8-10 minutes). Add the saffron and the vegetable broth and bring to a boil. Add the carrots, reduce the heat, cover the pot and let simmer for 5-10 minutes. Remove from heat completely and let cool down.
  4. Working with a blender in batches, puree the soup and return it to the pot or use an immersion blender directly in it! In either case, make sure your soup has cooled enough to safely puree!!
  5. Place pureed soup over low heat and stir in the light cream.Taste and add additional salt & pepper if desired. Serve!

Roasted Carrot Saffron Soup | Kicking Back the Pebbles

Υλικά:
700 gr. καρότα, ξεφλουδισμένα και κομμένα σε μέτρια κομμάτια (5 εκ. περίπου!)
2 κουταλιές της σούπας ελαιόλαδο
2 μέτρια κρεμύδια, ψιλοκομμένα
1 ½ κουταλάκι του γλυκού σαφράν νήμα (αν χρησιμοποιήσετε σκόνη μειώστε σε 1 κγ)
1500 ml. ζωμό λαχανικών
½ φλυτζάνι ελαφριά κρέμα γάλακτος

Οδηγίες:

  1. Προθερμαίνετε το φούρνο στους 200 °C.
  2. Σε ένα μεγάλο μπολ ανακατεύετε τα καρότα με τη 1 κουταλιά ελαιόλαδο, αλάτι και πιπέρι. Αφού σιγουρευτείτε ότι τα καρότα σας έχουν καλυφθεί ομοιόμορφα με λάδι και αλατοπίπερο, τα απλώνετε σε χαμηλό αντικολλητικό ταψί και τα ψήνετε μέχρι να μαλακώσουν και να αρχίσουν να κάνουν καφέ σημάδια (σαν να έχουν καψαλιστεί στη σχάρα —θα σας πάρει περίπου 30+ λεπτά).
  3. Σε μία μεγάλη κατσαρόλα ζεσταίνετε το υπόλοιπο ελαιόλαδο (1 κουταλιά της σούπας) και μαγειρεύετε τα κρεμμύδια σε μέτρια φωτιά μέχρι να μαλακώσουν και να “γυαλίσουν” (περίπου 8-10 λεπτά). Προσθέτετε το σαφράν και το ζωμό λαχανικών και δυναμώνετε λίγο τη θερμοκρασία για να αρχίσει το βράσιμο. Ρίχνετε τα καρότα που έχετε βγάλει από το φούρνο, χαμηλώνετε ξανά τη φωτιά και αφήνετε τη σούπα να σιγοβράσει με κλειστό καπάκι, για άλλα 10 λεπτά. Σβήνετε τη φωτιά, βγάζετε την κατσαρόλα από το μάτι και αφήνετε λιγάκι να κρυώσει.
  4. Μπορείτε να χρησιμοποιήσετε μπλέντερ δουλεύοντας σε δόσεις ή ραβδομπλέντερ κατευθείαν μέσα στην κατσαρόλα. Είναι σημαντικό να έχει πέσει αρκετά η θερμοκρασία —ένα από τα συνηθέστερα ατυχήματα στην κουζίνα, είναι τα εγκαύματα όταν πολτοποιούμε σούπες!!
  5. Βάζετε ξανά τη σούπα σε χαμηλή φωτιά για λίγα λεπτά και προσθέτετε την κρέμα γάλακτος. Δοκιμάστε εάν χρειάζεται επιπλέον αλάτι & πιπέρι. Μπορείτε να σερβίρετε με σπιτικά κρουτόν ή κριτσίνια!

Εάν ακολουθείτε το Kicking Back the Pebbles για κάποιο διάστημα, είναι σίγουρο πως θα έχετε διαβάσει αρκετές φορές για το Foodify: ένα food group στο Facebook που δημιουργήσαμε με φίλους μπλόγκερ, με κοινό μας σημείο την αγάπη για το καλό φαγητό και τη μαγειρική! Επιθυμία μας ήταν να κάνουμε κάτι κατ’ αρχάς διασκεδαστικό, που θα αποτελούσε έμπνευση για περισσότερες δημιουργίες στις κουζίνες μας και καλύτερες δημοσιεύσεις στα μπλογκ μας!

Κάτι που κάνουμε συχνά για να κερδίζουμε το ενδιαφέρον των μελών μας, να τα εμπνέουμε και να τα προκαλούμε σε νέες γαστριμαργικές δημιουργίες είναι το να διοργανώνουμε διαδικτυακά παιχνίδια (μπορείτε να ρίξετε μια ματιά σε μερικά από τα event που έχουμε οργανώσει κατά καιρούς εδώ & εδώ). Αυτή την εποχή, μιας και φθινοπώριασε πια αρκετά αποφασίσαμε να παίξουμε με σούπες! Σούπες με εποχικά υλικά φυσικά ενώ η πρόκληση ήταν να χρησιμοποιήσουμε μόνο 6 (εξαιρώντας το αλατοπίπερο). Κάπως έτσι δημιουργήθηκε η Βελούδινη Σούπα μου με Ψητά Καρότα & Σαφράν ενώ παρακάτω θα βρείτε links και για τις υπέροχες συνταγές των υπόλοιπων συμμετεχόντων.

      Ευχαριστώ πολύ Εύη! Ταιριάζει πραγματικά πολύ το σαφράν αλλά βρίσκω ότι παίζει ρόλο στη γεύση και το “καψάλισμα” των καρότων στο φούρνο!! Ελπίζω να τη δοκιμάσεις και να μου πεις εντυπώσεις 🙂

P.S.: I realize as I'm posting this that several online shops are swamped with orders during lockdowns and have decided to go on a brief halt. Also, keep in mind that all shipments are susceptible to delays due to Covid-19 restrictions. My post is only meant to inspire you and not to overwhelm you in any way. If you like the look and wish to go for it, you can totally DIY it—or do something similar—with whatever materials you have at hand. To recreate these particular baubles, use matte black spray-paint and give your old ones a coat or two. Use a small paintbrush and mod-podge to draw snowflakes (or any other shape you 🖤), sprinkle with gold glitter, and voilà! Things should get better. Be patient, keep your chin up, and get creative—it helps battle the blues.
