Saint Fanourios—pronounced [Fa-nú-reeh-os]—is a Saint of the Greek Orthodox Church commemorated yearly on the 27th of August. Tradition dictates that on this day women bake a “Fanouropita” [Fa-nu-ró-peeh-ta] using seven or nine main ingredients, take it to church to be “blessed” during Mass, and share it, after dismissal, with the rest of the congregation.

Even though called a “pita” (meaning a pie) it is essentially a cake baked with no milk, butter, or eggs because it’s supposed to be a Lenten food.

It is also supposed to be an offering to Saint Fanourios in exchange for his help on revealing a lost item, it being anything from an actual valuable item to something more abstract like love for the lonely or health for the sick, a much-wanted pregnancy, a job for the unemployed, happiness, joy or world peace. Of course, one can make it throughout the year and doesn’t have to wait for August 27th  if in need of some immediate divine intervention!

In any case, it’s a nice, soft & light coffee/tea cake.

Ingredients
  

Bowl 1

  • 2 ½ cups flour
  • 4 tsp baking powder
  • 1 tsp Ceylon cinnamon
  • ¼ tsp ground clove (optional)
  • ¼ tsp salt

Bowl 2

  • 1 ¼ cups vegetable oil
  • 1 ¼ cups sugar
  • 1 ⅓ cups orange jucie
  • 1 tsp baking soda

Add-ons

  • 1 cup chopped walnuts
  • 1 cup raisins (optional)

Instructions
 

  • In a bowl, sift the flour with the baking powder, cinnamon, (clove), and salt.
  • In another bowl, whisk the oil with the sugar and orange juice (into which you must previously dissolve the baking soda).
  • Add the flour mix to the oil mix and fold together until you end up with a thick cake batter.
  • Add the walnuts (and raisins).
  • Spray a baking dish or cake tin with vegetable oil, pour the batter in and bake in a preheated oven at 180-200 °C/350-400°F for 30-40 minutes. Treat it just like any cake—use the low rack, test if it’s done with a toothpick, skewer, etc.
  • Let it cool down completely before you dust with powdered sugar (optional) and cut into it.

Ingredients
  

Μπολ 1

  • 540 γρ αλεύρι
  • 4 κουταλάκια του γλυκού baking powder
  • 1 κουταλάκι του γλυκού κανέλα Κεϋλάνης
  • ¼ κουταλάκι του γλυκού τριμμένο γαρίφαλο (προαιρετικά)
  • ¼ κουταλάκι του γλυκού αλάτι

Μπολ 2

  • 250 ml σπορέλαιο
  • 250 γρ ζάχαρη
  • 275 ml πορτοκαλάδα
  • 1 κουταλάκι του γλυκού μαγειρική σόδα

Πρόσθετα

  • 75 γρ καρύδια τριμμένα
  • 75 γρ σταφίδες (προαιρετικά)

Instructions
 

  • Σε ένα μπολ κοσκινίζουμε το αλεύρι με το baking powder, την κανέλα, (το τριμμένο γαρύφαλλο), το αλάτι.
  • Σε ένα άλλο μπολ ανακατεύουμε το λάδι με τη ζάχαρη και την πορτοκαλάδα, στην οποία έχουμε διαλύσει από πριν τη σόδα.
  • Προσθέτουμε το μείγμα του αλευριού και συνεχίζουμε να ανακατεύουμε μέχρι να δημιουργηθεί μια κρεμώδης ζύμη κέικ, όχι πολύ λεπτόρευστη.
  • Προσθέτουμε τα καρύδια (και τις σταφίδες).
  • Ρίχνουμε τη ζύμη σε αντικολλητικό ταψάκι ή φόρμα για κέικ και ψήνουμε σε προθερμασμένο φούρνο, στους 180-200 οC για 40 λεπτά περίπου όπως θα ψήναμε ένα άλλο κέικ (πάνω-κάτω φωτιά, χαμηλή σχάρα, βυθίζουμε ένα μαχαίρι ή οδοντογλυφίδα για να ελέγξουμε αν έχει ψηθεί).
  • Αφού κρυώσει, πασπαλίζουμε με ζάχαρη άχνη (προαιρετικά).

    Μυστικιστικό πιάτο Αθηνά, η Παράδοση το θέλει με 7 ή 9 υλικά ώστε να βοήθησει ο Άγιος σε αυτό που θέλουμε να βρούμε ή να μας βρει. Η επιλογή των αριθμών αυτών δεν είναι καθόλου τυχαία, μια και είναι γνωστός ο ρόλος των αριθμών στις μαντικές και μαγικές πρακτικές. Τα επτά ή εννιά υλικά φαίνεται να ενισχύουν ακόμα περισσότερο τη δύναμη της πίτας!

      Χααα… τώρα με έβαλες σε σκέψεις. Χμμμ, εάν βγάλεις τα προαιρετικά από τη δική μου (τριμμένο γαρύφαλλο και σταφίδες), βγαίνουν 9. Αυτό που δεν αντέχω με τίποτα είναι οι συνταγές με βούτυρο! Αν άκουγε η γιαγιά μου για Φανουρόπιτα με βούτυρο θα χτύπαγε το κεφάλι της στον τοίχο και θα είχε δίκιο – και το λέω εγώ που δεν είμαι… παιδί της νηστείας!

        Συμφωνώ με την γιαγιά σου, ορισμένα πράγματα είναι καλό να παραμένουν όπως μας τα παρέδωσαν. Προσπαθώ ξέρεις να τελειώσω ένα βιβλίο που υποτίθεται έχει συνταγές. Μου αρέσει η κουζίνα, είναι ψυχοθεραπευτική. Στο blog έχω κάνει ανάρτηση δύο κομμάτια στην κατηγορία ΜΑΓΕΙΡΙΚΗ. Το ένα είναι αφιερωμένο στη γιαγιάκα μου και λέγεται “Το λεμονάτο της γιαγιάς”. Η δική σου γνώμη έχει βαρύτητα και αν βρεις τον χρόνο θα ήθελα να μου επισημάνεις αν βλέπεις αδύνατα στοιχεία. Γράφω και σβήνω, το γιοφύρι της Άρτας έχει κανταντήσει… Ρίξε μια ματιά όταν μπορέσεις.

          Τι βαρύτητα βρε Κώστα;;… με κολακεύεις αλλά δεν είμαι τόσο expert όσο φαίνομαι!! Απλά ήμουν τυχερή και η μαμά με τη γιαγιά μου ήταν αυτό που λέμε “μαστόρισσες” οπότε κάτι πήρα κι εγώ, μέσα στις κουζίνες από μικρή! Σε κάθε περίπτωση θα δω τις συνταγές σου απόψε, θα ρωτήσω και τη μαμά μου (LoL) και θα σου πω! Σε ευχαριστώ που με ρώτησες! 🙂 🙂 🙂

    Αν και λίγο αργοπορημένα…..αυτή η συνταγή φανουρόπιτας είναι συγκλονιστική!!! Στο μέλλον (όχι φυσικα το άμεσο) θα προσπαθήσω να την φτιάξω και μόνη μου Αθηνά!!xxxx

      Να δοκιμάσεις και να πειραματιστείς! Η συνταγή αφήνει πολλά περιθώρια: περισσότερες ή λιγότερες (ή και καθόλου) σταφίδες, καρύδια, αμύγδαλα… ξύσμα πορτοκαλιού αντί για λεμονιού, κτλ. Ακόμα και την ποσότητα του αλευριού μπορείς να “πειράξεις” ανάλογα με το πόσο σφιχτό ή αφράτο προτιμάς το κέικ σου… Το μόνο με το οποίο δεν θα έπαιζα είναι η ποσότητα της ζάχαρης (έχω δοκιμάσει να τη μειώσω αλλά δεν το “σηκώνει”). Θεωρώ βέβαια ότι αν δεν πασπαλίσεις με άχνη από πάνω, η ζάχαρη της ζύμης είναι σωστή & τόση όση πρέπει… 🙂

If you like the look and wish to go for it, you can totally DIY it—or do something similar—with whatever materials you have at hand. To recreate these particular baubles, use matte black spray-paint and give your old ones a coat or two. Use a small paintbrush and mod-podge to draw snowflakes (or any other shape you 🖤), sprinkle with gold glitter, and voilà! Things should get better. Be patient, keep your chin up, and get creative—it helps battle the blues.

P.S.: I realize as I'm posting this that several online shops are swamped with orders during lockdowns and have decided to go on a brief halt. Also, keep in mind that all shipments are susceptible to delays due to Covid-19 restrictions. My post is only meant to inspire you and not to overwhelm you in any way. If you like the look and wish to go for it, you can totally DIY it—or do something similar—with whatever materials you have at hand. To recreate these particular baubles, use matte black spray-paint and give your old ones a coat or two. Use a small paintbrush and mod-podge to draw snowflakes (or any other shape you 🖤), sprinkle with gold glitter, and voilà! Things should get better. Be patient, keep your chin up, and get creative—it helps battle the blues.
