Soft Orange Popsicle Cookies
The Flavor of a Childhood Summer Afternoon.
When we were little, summer afternoons had a soundtrack. The hiss of hose water hitting hot pavement, the low hum of cicadas, and that telltale clink-clink of the kiosk (periptero) freezer door, which most likely meant one thing: orange popsicles.
There was no ceremony to them. No fancy wrappers, no Instagrammable drizzle. Just a simple stick of citrusy ice that stained your fingers and left a sweet little puddle trailing down your wrist. If you were lucky, you’d get to the last bite before the heat did.
That flavor (the one you can almost taste just thinking about it) has a way of making you feel six years old again in the best possible way. Bright but mellow. Tangy, but not too much. Sweet in a way that wraps around you like a blankie. And it is more than nostalgia—it’s sensory shorthand for childhood ease. It’s sunbaked sidewalks and damp stone, the playful chatter of old yiayias* gathering by the street corner, and the thrill of a cold treat in a small town moment.

A Bite of Familiar Comfort
These Soft Orange Popsicle Cookies are my grown-up nod to that simple happiness. They don’t melt (thankfully), but they do carry that same soft, comforting citrus & cream note. Bite into one, and suddenly, you can almost hear the hose running again.
The cookies come out tender and bright, with a soft citrus note that’s less “punchy orange” and more “gentle childhood memory.” They don’t taste like candy, and they’re not trying to be a creamsicle. Instead, they land right in that sweet spot of flavor you somehow recognize before you even swallow.
One bite and you’re standing barefoot on the sidewalk curb again, sticky fingers and all. That’s the magic of these cookies—they’re not just dessert. They’re a little time machine dressed up in orange.

Soft Orange Popsicle Cookies
Ingredients
- 2 cups all-purpose flour (spoon-and-level, 255 g)
- 2 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- ¾ of a standard 3-oz box* orange Jell-O powder (60 g or 6 tbsp)
- 2 tbsp orange zest
- ½ cup butter (113 g or 8 tbsp)
- ¾ cup + 2 tsp sugar (180 g)
- 2 eggs medium-sized
- 1 tsp vanilla extract
- 1 tbsp milk
- 8 oz cream cheese flavored baking chips** (226 g)
Instructions
- Preheat oven to 350 °F (175 °C) and line a baking sheet with parchment paper. (You'll actually need two, but you can also bake in batches.)
- In a bowl, whisk together the flour, baking powder, baking soda, salt, orange Jell-O powder, and orange zest. Set aside.
- In a separate large bowl, beat the butter and sugar together until light and fluffy.
- Beat in the eggs one at a time, followed by the vanilla extract and milk. Mix until smooth.
- Gradually add the dry ingredients into the wet mixture, mixing just until combined.
- Stir in the cream cheese chips gently and try to spread them through the dough evenly.
- Use an ice cream or cookie scoop to transfer the dough onto the prepared baking sheet (each dollop should be about 1 to 1½ tbsp), spacing cookies about 2 inches apart.
- Bake for 11–13 minutes, or until the edges are set but the centers look slightly soft.
- Allow cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
