The Legumes Chronicles: The humble White Bean Soup

There was a time (because of wars and poverty, but also because of its high nutritional value) when our great-grandparents, grandparents & parents ate it all the time, so much so, that it became a very typical dish of the Greek cuisine—our renowned “national food”. But in the latest years? Not so much. People considered it too tacky and too soul-less, and it has been time and again frowned upon and “yuck-ed” at, especially by youngsters—even I used to think so as a teenager but little, too little, did I know! Nowadays, amidst countless efforts to maintain a healthy diet and as of lately swept in the vortex of recession, my dad’s favorite soup sounds more inviting than ever. So, today I bring to you the humblest of all legumes dishes, the White Bean Soup.

A vegan Mediterranean White Bean Soup, packed with vegetables and plant-based protein, suitable for lunch or dinner. It's also gluten-free!

Equipment

  • Pressure Cooker

Ingredients
  

  • 0.55 lb common white beans or Cannellini beans (an Italian variety) (250 g)
  • 1 tbsp apple cider vinegar
  • 33.8 - 47.3 Fl.oz water (1000-1400 ml)
  • 1 medium red onion diced
  • 2 medium carrots diced
  • 2 stalks celery diced
  • 1 can diced tomatoes (usually 400 g/14 oz)
  • 1 tsp tomato paste
  • ½ cup extra virgin olive oil (125 ml/4.2 Fl.oz)
  • salt & pepper, pinch of sugar
  • 1 cup fresh parsley finely chopped

Instructions
 

How to prepare dried legumes for soups:

  • Give the beans a good rinse in a colander under cold running water.
  • Pour the beans into a pot or large bowl and cover them with a few centimeters of recently boiled water—warm water helps break down indigestible starches. (You can use fresh water instead.)
  • Add a tablespoon of apple cider vinegar.
  • Soak for 8 to 12 hours.
  • Drain, rinse again, and return to a clean pot/pressure cooker.

Method:

  • Place beans in your pressure cooker & add water.
  • Dice all your veggies (onions, carrots, celery). Add them to the pot along with the diced tomatoes and tomato paste.
  • Add olive oil, salt & pepper, a pinch of sugar.
  • Seal the lid and cook for 25-30 minutes on medium heat.
  • Let the steam off, unseal, and open the cooker. Add a cup of finely chopped fresh parsley and give it all a good stir.
  • Add some freshly ground pepper to serve.

Notes

You can leave your carrots whole, take them out when you unseal your pressure cooker, puree them in a food processor, and pour them back in for a final stir. The purpose is to achieve a more thick & velvety texture but my mom used to do it because, like most kids, we hated boiled carrots... when pureed and mixed in, we couldn't tell the difference (we thought it was all tomato), and didn't give her such a hard time!
Then, you can skip the celery stalks but that would be a pity. You can also use the leafy part of the celery instead (whole) but make sure you take it out before adding the parsley and/or pureed carrots in the final step. I do feel the leaves give an entirely different taste and aroma than the stalks, which, to me, are a better match for white beans.

Οι προπαππούδες, οι παππούδες και οι πατέρες μας την έτρωγαν όλη την ώρα. Κάτι οι πόλεμοι, κάτι η φτώχεια, κάτι ο… στρατός αλλά και –μεταγενέστερα– η αναγνωρισμένη υψηλή διατροφική της αξία στις απαρχές της διαμόρφωσης της Μεσογειακής διατροφής, και η φασολάδα βρισκόταν τόσο συχνά στα κατσαρόλια μας που έφτασε να χαρακτηριστεί «εθνικό φαγητό» πολύ πριν τον προμαγειρεμένο, τίγκα-στο-λάδι, πρόχειρα-ξαναζεσταμένο «μουζάκα» των εστιατορίων της Πλάκας της δεκαετίας του ’80. Η δική μας γενιά μάλλον την παρεξήγησε, τη χλεύασε, τη θεώρησε ρετρό, τη σνόμπαρε όσο κανένα άλλο πιάτο της ελληνικής κουζίνας.

Στις μέρες μας αφού χορτάσαμε το fast food που είχαμε απωθημένο σαν έφηβοι και πληρώσαμε το τίμημα ακριβά, αποφασίσαμε να ρίξουμε μια ματιά στις εκατοντάδες έρευνες που έχουν γίνει στο εξωτερικό για τα οφέλη της δικής μας Μεσογειακής κουζίνας, να διαβάσουμε κανένα άρθρο από τα χιλιάδες που έχουν γραφτεί μπας και καταλάβουμε γιατί τόσος ντόρος παγκοσμίως για τη σημασία της ισορροπημένης διατροφής και ως εκ θαύματος να αναθεωρήσουμε την υπόθεση φασολάδα και όσπρια γενικότερα.

Να τολμήσω επίσης να πω ή μάλλον να γράψω και το εξής σαρκαστικό κι ας μου συγχωρήσετε το υφάκι: η μόδα της αστακομακαρονάδας των 100€ από κατεψυγμένο αστακό και κακοβρασμένα, τρέχα-γύρευε ποιότητας ζυμαρικά, έγινε σανίδι βρεγμένο και μας βαράει αλύπητα ενώ, στη δίνη της οικονομικής κρίσης,  η αγαπημένη σούπα του μπαμπά μου ακούγεται πιο ελκυστική από ποτέ. Καλά να πάθουμε – ελπίζω να μάθουμε!

Η ταπεινή Φασολάδα

Η φασολάδα στην Ελλάδα συναντάται από την αρχαιότητα. Ως φαγητό και θυσία στον θεό Απόλλωνα ήταν βασικό στοιχείο της γιορτής των Πυανοψίων (η ετυμολογία της λέξης είναι «ημέρα της φασολάδας») που είχε δώσει το όνομα της και στον αντίστοιχο μήνα του αττικού ημερολογίου.

Ingredients
  

  • 250 γρ φασόλια κατά προτίμηση βιολογικά
  • 1 κουταλιά της σούπας ξύδι
  • 1000 - 1400 ml νερό
  • 1 μέτριο κρεμμύδι
  • 2 μέτρια καρότα
  • 2 μπαστουνάκια σέλερι
  • 1 κονσέρβα ντοματάκια ψιλοκομμένα (συνήθως 400 γρ)
  • 1 κουταλάκι του γλυκού πελτέ
  • ½ κούπα ελαιόλαδο (125 ml)
  • αλάτι & πιπέρι
  • ¼ κουταλάκι του γλυκού ζάχαρη
  • 1 κούπα φρέσκο μαϊντανό ψιλοκομμένο

Instructions
 

Μούλιασμα/προετοιμασία οσπρίων (το προηγούμενο βράδυ)

  • Ξεπλένετε καλά τα φασόλια (σε ένα σουρωτήρι κάτω από τρεχούμενο κρύο νερό).
  • Βάζετε τα φασόλια να μουσκέψουν σε ένα μπωλ με φρέσκο ή βρασμένο νερό και μία κουταλιά ξύδι.
  • Τα αφήνετε για 8 εώς 12 ώρες.
  • Το επόμενο πρωί στραγγίζετε, ξεπλένετε και τα βάζετε στη χύτρα ταχύτητας.

Οδηγίες:

  • Βάζετε στη χύτρα ταχύτητας τα φασόλια με το νερό.
  • Ψιλοκόβετε όλα τα λαχανικά (κρεμμύδι, καρότα, σέλερι) και τα προσθέτετε μαζί με τα ντοματάκια, τον πελτέ και το ελαιόλαδο.
  • Ρίχνετε αλάτι & πιπέρι κατά προτίμηση και το ¼ κουταλάκι του γλυκού ζάχαρη.
  • Σφραγίζετε τη χύτρα και βράζετε με την ειδική βαλβίδα για 25-30 λεπτά.
  • Αφού χαμηλώσετε τη φωτιά, αφαιρέσετε τη βαλβίδα και μπορέσετε να ανοίξετε τη χύτρα, ρίχνετε τον μαϊντανό και ανακατεύετε καλά.

Notes

Μπορείτε να αφήσετε τα καρότα ολόκληρα, να τα αφαιρέσετε όταν ανοίξετε τη χύτρα, να τα λιώσετε στο μπλέντερ και να τα ξαναπροσθέσετε στη σούπα. Αυτό συνήθως το κάνουμε για να χυλώσει πιο πολύ η φασολάδα και να έχει μια βελούδινη υφή, αλλά η μαμά μου το έκανε για να μας κοροϊδέψει! Όπως τα περισσότερα παιδιά μισούσαμε τα βραστά καρότα ή τουλάχιστον έτσι νομίζαμε, γιατί όταν η μαμά τα έλιωνε και τα ανακάτευε με τα υπόλοιπα υλικά δεν παίρναμε χαμπάρι και νομίζαμε πως τρώγαμε μόνο ντομάτα. Τι τραβούσαν κι αυτές οι μαμάδες…
Μπορείτε επίσης να παραλείψετε το σέλερι, αλλά πραγματικά νομίζω πως θα είναι κρίμα. Αντί για σέλερι μπορείτε να χρησιμοποιήσετε ένα κλωναράκι σέλινο (όχι ψιλοκομμένο αλλά ολόκληρο) αλλά θυμηθείτε να το αφαίρεσετε πριν ρίξετε τον μαϊντανό στο τέλος. Νομίζω ωστόσο ότι αφήνει μια εντελώς διαφορετική γεύση από το σέλερι. Όπως και να έχει, σερβίρετε με φρεσκοτριμμένο πιπέρι και θα με θυμηθείτε.

To recreate these particular baubles, use matte black spray-paint and give your old ones a coat or two. Use a small paintbrush and mod-podge to draw snowflakes (or any other shape you 🖤), sprinkle with gold glitter, and voilà! Things should get better. Be patient, keep your chin up, and get creative—it helps battle the blues.

P.S.: I realize as I'm posting this that several online shops are swamped with orders during lockdowns and have decided to go on a brief halt. Also, keep in mind that all shipments are susceptible to delays due to Covid-19 restrictions. My post is only meant to inspire you and not to overwhelm you in any way. If you like the look and wish to go for it, you can totally DIY it—or do something similar—with whatever materials you have at hand. To recreate these particular baubles, use matte black spray-paint and give your old ones a coat or two. Use a small paintbrush and mod-podge to draw snowflakes (or any other shape you 🖤), sprinkle with gold glitter, and voilà! Things should get better. Be patient, keep your chin up, and get creative—it helps battle the blues.
