Ugly Duckling Cookies (Brutti ma Buoni)

Traditional Italian Brutti ma Buoni cookies may not win beauty contests, but one bite explains why they’ve survived generations of Italian baking untouched by trends! Translating literally to “ugly but good,” these rustic little cookies are beloved for their crackled appearance, crisp shell, and soft chewy center. Made primarily with whipped egg whites and nuts—hazelnuts or almonds—they’ve been part of Italian baking tradition since at least the 19th century, with several regions proudly claiming them as their own. In Tuscany, particularly around Prato, they’re known as mandorlati di San Clemente and are often enjoyed alongside the region’s famous almond biscuits.

Ugly Duckling Cookies — Crunchy, Chewy & Impossible to Resist
Now, if you’ve been around here long enough, you already know I have a soft spot for giving traditional recipes slightly whimsical new identities. After all, this is the same kitchen that renamed Greek Fanouropita Muffins into Serendipity Muffins. So when these gloriously craggy bites emerged from the oven looking delightfully chaotic, “Ugly Duckling Cookies” felt inevitable. Because much like the fairy tale, they begin as awkward little creatures and somehow end up stealing the entire show. Not polished; not symmetrical; not remotely interested in being Instagram-perfect. And yet? Completely irresistible, and proof that perfection is wildly overrated!


Ugly Duckling Cookies | Traditional Italian Brutti ma Buoni
Equipment
- hand mixer
Ingredients
- 2 large eggs (whites only) room temperature
- ¼ tsp salt
- ¾ cup granulated sugar (150 g)
- 1½ cups roasted hazelnuts (150 g) roughly chopped
Instructions
- Preheat your oven to 320°F/160°C and line a baking tray with parchment paper.
- If your hazelnuts aren’t already roasted, toast them for about 8–10 minutes until fragrant. Let them cool slightly, then roughly chop them. Avoid finely grinding them—texture is everything here.
- In a clean mixing bowl, beat the egg whites from 2 large eggs with ¼ tsp salt until soft peaks form.
- Gradually add ¾ cup granulated sugar while continuing to whisk until the meringue becomes glossy and thick with stiff peaks.
- Fold in 1½ cups roasted hazelnuts (chopped).


- Transfer the mixture to a nonstick saucepan or pot and cook over low heat for 10–12 minutes, stirring continuously with a wooden spoon or spatula. The mixture will thicken slightly and take on a faint golden color. This step gives Brutti ma Buoni their signature chewy texture and deeper caramelized flavor.


- Scoop rustic little mounds onto the prepared baking tray.
- Bake for about 20 minutes at 160°C (320°F), or until the cookies are lightly golden and crisp on the outside.


- Allow them to cool completely on the tray before serving.
Notes
- Don’t overwork the shape—these cookies were never meant to be beauty queens.
- The centers should stay slightly chewy beneath the crisp exterior.
- They pair beautifully with espresso, vin santo, or dramatic storytelling in an Italian grandmother voice.


Ένα μπισκότο σαν ασχημόπαπο — ιταλικά Brutti ma Buoni με φουντούκι
Μην τα κρίνετε από την εμφάνισή τους! Αυτά τα χειροποίητα μπισκοτάκια θα σας ενθουσιάσουν με τη λεπτή τους γεύση. Φτιάχνονται από μαρέγκα ανακατεμένη με καβουρδισμένα φουντούκια ή αμύγδαλα και στην Ιταλία τα λένε Brutti ma buoni (κυριολεκτικά «άσχημα αλλά νόστιμα») λόγω του ακανόνιστου σχήματός τους.


Αυθεντική ιταλική συνταγή για Brutti ma Buoni
Equipment
- πολυκόφτης/multi (προαιρετικά)
- μίξερ χειρός
Ingredients
- 2 μεγάλα αυγά (τα ασπράδια μόνο) σε θερμοκρασία δωματίου
- ¼ κουταλάκι του γλυκού αλάτι
- 150 γραμ. ζάχαρη κρυσταλλική
- 150 γραμ. φουντούκια καβουρδισμένα και ψιλοκομμένα
Instructions
- Προθερμαίνετε τον φούρνο στους 160°C και στρώνετε ένα ταψί με αντικολλητικό χαρτί ψησίματος.
- Αν τα φουντούκια δεν είναι ήδη καβουρδισμένα, τα ψήνετε για περίπου 8–10 λεπτά μέχρι να μοσχομυρίσουν. Τα αφήνετε να κρυώσουν ελαφρώς και τα ψιλοκόβετε (στο multi ή στο χέρι).
- Σε καθαρό μπολ χτυπάτε τα ασπράδια από 2 μεγάλα αυγά με ¼ κουταλάκι του γλυκού αλάτι μέχρι να σχηματιστούν απαλές κορυφές.
- Προσθέτετε σταδιακά 150 γραμ. ζάχαρη συνεχίζοντας το χτύπημα μέχρι να δημιουργηθεί μια γυαλιστερή και σφιχτή μαρέγκα.
- Ρίχνετε 150 γραμ. φουντούκια (καβουρδισμένα και ψιλοκομμένα) και ανακατεύετε απαλά.


- Μεταφέρετε το μείγμα σε αντικολλητικό κατσαρολάκι και μαγειρεύετε σε χαμηλή φωτιά για 10–12 λεπτά, ανακατεύοντας συνεχώς με ξύλινη κουτάλα ή σπάτουλα. Το μείγμα θα γίνει πιο πυκνό και θα πάρει ελαφρώς χρυσαφένιο χρώμα.


- Με δύο κουτάλια ή ένα scoop σχηματίζετε ακανόνιστα «βουναλάκια» πάνω στο ταψί.
- Ψήνετε για περίπου 20 λεπτά μέχρι να πάρουν ελαφρώς χρυσαφένιο χρώμα.


- Αφήνετε τα μπισκότα να κρυώσουν εντελώς πριν τα μεταφέρετε από το ταψί.
Notes
- Μην παιδευτείτε να τους δώσετε σχήμα—όσο πιο ανομοιόμορφα, τόσο πιο αυθεντικά.
- Διατηρούνται σε αεροστεγές δοχείο για περίπου 5 ημέρες.
- Συνοδεύουν τέλεια espresso, ελληνικό καφέ ή φραπεδιά, αλλά και μικρές υπαρξιακές κρίσεις!
