Vaniglia d’Oro Cookies
This past weekend, I set out on a little mission. I wanted to bake cookies for my husband’s nameday to treat his coworkers at the office. I was looking for something buttery yet delicate, scented with warm vanilla and a whisper of citrus. Should be easy, right? Nope! After a bit of digging through simple cut-out butter cookie recipes, the reality of what I knew well from experience, but had chosen to ignore, hit me: typical butter cookie dough is a diva! Soft, sticky, and completely uncooperative when it comes to rolling and cutting, it is basically the Houdini of doughs, determined to ruin your plans by falling apart the moment it most certainly shouldn’t.
So after some trial and error, a minor meltdown, and some investigative world wide web scrolling, I came up with a fix (reduced the butter slightly, added cornstarch and a little extra flour), played around with my scented “potions” (vanilla, almond, orange), and looked into my baking “toys” bin to see what fun stuff I had in hand (hello edible glue and gold sanding sugar). Et Voila! I happily present you with my Vaniglia d’Oro Cookies—because everything sounds fancier in Italian!

Golden, buttery, and firm enough to survive the cut-out chaos, they’re now ready to take over the office—sweetness guaranteed, disasters optional.
Vanilla of Gold
Vaniglia d’Oro Cookies smell like warm vanilla, a trace of almond, and the faintest whisper of citrus. Their name, “Vanilla of Gold,” hints at what you’ll find in every bite: a rich, buttery crumb that gleams with the brightness of afternoon light. They hold their shape beautifully, roll and cut with ease, and bake to a pale gold that glows beneath a dusting of fine sanding sugar.
Imagine them tucked into a gift box, or waiting beside a cup of coffee after dinner. Elegant enough for the holidays, and simple enough for an afternoon bake — a quiet luxury in cookie form.
A few helpful tips – Make-Ahead & Storage

Vaniglia d’Oro Cookies
Equipment
- stand mixer
- paddle attachment
Ingredients
- 1¼ cups confectioner's/icing sugar (spoon-and-level, 142 g)
- 8 oz unsalted butter at room temperature (225 g)
- 1 large egg yolk
- 1 tsp salt
- ½ tsp vanilla extract
- ¼ tsp almond extract (optional)
- ¼ tsp orange extract (optional)
- 2¾ cups + 2 tbsp all-purpose flour (spoon-and-level, 345 g)
- 2 tbsp cornstarch
Finishing Touches
- edible glue
- sanding sugar gold
Instructions
- In the bowl of a stand mixer fitted with the paddle attachment, beat together 1¼ cups confectioner's/icing sugar, 8 oz unsalted butter, 1 large egg yolk, 1 tsp salt, ½ tsp vanilla extract, ¼ tsp almond extract, and ¼ tsp orange extract until smooth and creamy — about 2 to 3 minutes. Don’t overbeat; you want the mixture lightened but not fluffy.
- In a separate bowl, whisk together 2¾ cups + 2 tbsp all-purpose flour and 2 tbsp cornstarch. Add this dry mixture to the butter mixture and beat on low speed until the dough comes together. It may look crumbly at first, but it will soon form a cohesive mass.
- Divide the dough in half. Shape each half into a rectangular slab about ¾ to 1 inch thick (not a ball — slabs chill and roll more evenly). Wrap each slab tightly in plastic wrap.
- Refrigerate for 1 to 2 hours, or up to overnight. If you’re short on time, you can freeze the slabs for 20 to 30 minutes instead.
- Preheat your oven to 350°F/175°C.
- Remove one dough slab from the fridge and let it rest at room temperature for 5–10 minutes — just until it’s firm but pliable.
- Place the dough between two sheets of parchment paper (you may need a sprinkle of extra flour). Roll it to a thickness of ⅛ to 3⁄16 inch (3–5 mm).
- Peel off the top sheet of parchment, cut shapes with a cookie cutter, and transfer the cookies—I use an offset spatula and find it very helpful—to a baking sheet.
- Gather and re-roll scraps, chilling briefly if needed to firm up the dough again.
- Bake the cookies for 12 to 14 minutes, or until set and just barely golden around the edges. They shouldn’t brown much.
- Cool the cookies directly on the pan, or lift the parchment to a cooling rack if you need to reuse the sheet for the next batch.
- Once fully cool, decorate with gold sanding sugar — or leave them plain and let that buttery, citrus-vanilla-almond perfume speak for itself!
Finishing Touches
- Lightly apply edible glue* to the entire surface of the cookie. If your glue bottle comes with a brush, that's perfect. Mine didn't, so I poured some into a little bowl and, in all honesty, I used the tip of my finger to apply! Worked like a charm — just make sure your fingers are clean!
- Sprinkle the cookies with the gold sanding sugar and let them set for 15–30 minutes.
Notes
What Is Sanding Sugar? Sanding sugar is a type of coarse, sparkling sugar often used to decorate baked goods. Unlike regular granulated sugar, its larger crystals catch the light, adding a subtle sparkle and a slight crunch without melting during baking. It’s perfect for cookies, cupcakes, and other desserts that call for a touch of shimmer or texture.

Μπισκότα Vaniglia d’Oro
Equipment
Ingredients
Instructions
